N.H.D. candidate Brenda West was one of two attendees from North Dakota. Both enjoyed the book-signing and other events. West’s Natural Reader Note: When you have a dream, surround yourself with visual reminders that encourage you to make it happen. Long before she enrolled with Clayton College, West kept a CCNH catalog on her nightstand, imagining which electives she would choose and which subjects she would study first. She enrolled in our M.S.N.H. program and now is working on her doctoral degree.

Bottom Left: Our conference students enjoyed a learning lunch in which each attendee received a sample of crystallized ginger. Natural Reader Note: Both fresh and dried ginger root have therapeutic properties for digestion, hypertension and headaches. Here’s an easy way to keep fresh ginger on hand without spoilage: peel fresh roots, chop in a blender, place in a plastic bag, and freeze. Ginger thaws almost immediately.

Horne’s Natural Reader Note: Considered by many “The King of Herbs,” alfalfa is a rich source of many trace minerals, containing large amounts of potassium, calcium and magnesium, and smaller amounts of phosphorus, sulfur, copper, cobalt, iron and many others.
