Rejuvenating Recipes

After the holidays, many of us feel lethargic, run down and even bloated. The beginning of the new year is a great time to experiment with cleansing recipes to help our over taxed bodies.  We should start by avoiding acid foods and focus on alkaline foods.

Alkaline Foods

Acid Foods

Greens   Meats
Lima beans   Sugar
Millet   Wheat
Figs, Raisins   Bread
Carrots   Dairy
Celery    
Almonds    
   
         

Apple Nut Salad

3 apples, cored and chopped finely
1/2 cup walnuts, chopped
1 teaspoon cinnamon
2/3 cup orange juice

Mix all ingredients in a bowl and serve.

Avocado Boats

2 ripe avocados
1/2 ripe tomato, finely chopped
1/3 cucumber, finely chopped
1/4 teaspoon garlic powder
1 teaspoon lemon juice
pinch cayenne pepper and salt

Carefully cut avocados in half lengthwise and remove seed. Remove avocado pulp from shell and mash in a bowl. Add other ingredients and mix. Put mixture back into avocado shells. Serve with raw carrot and celery sticks.

Broccoli Saute

1 lb. Broccoli, chopped
1 onion, chopped
1 1/2 teaspoons oil
1/2 cup water
1 tablespoon caraway seeds

Saute ingredients in a large frying pan over medium-high heat for 10 minutes. Great served over steamed brown rice.

Cauliflower and Carrots

1 head cauliflower, chopped
2-3 carrots, thinly sliced
1 1/2 teaspoons oil
1/3 cup water
juice from 1/2 lemon
1/2 teaspoon dry mustard powder
1/4 teaspoon tarragon
salt and pepper to taste

Steam cauliflower and carrots over boiling water for 10 minutes. Remove from heat. Add to remaining ingredients in a wok or skillet. Stir-fry over medium-high heat for 5-10 minutes.

Sweet Sauteed Red Cabbage

1/2 red cabbage, shredded
1 apple, chopped
small onion, chopped
1/2 cup water
1/2 cup raisins
1/2 teaspoon cinnamon

Use a non-stick pan, if possible, and heat ingredients, stirring occasionally, over medium-high heat for 10 minutes.
