Cinnamon Holiday Teas

Christa’s Digestive Delight

Christa Sinadinos recommends that fresh ginger is used in this tea, which is helpful for all types of digestive issues.

1 part fennel seeds
1 part anise seeds
1 part cinnamon chips
1 part orange peel (organic)
1 part licorice root
3 tablespoons fresh or dried ginger

Make a strong decoction by combining all ingredients in a pot, cover with water, and simmer over low heat for at least 20 minutes.

Brigitte’s Best Brrrrr–Blast

Brigitte Mars recommends this tea for the cold season, as it is warming and spicy.

2 parts roasted dandelion root
1/2 part cinnamon bark
1/2 part dried ginger root
1/2 part decorticated cardamom pods
1/2 part star anise

Crush all herbs in a mortar and pestle or mix briefly in a blender. Add approximately 1 teaspoon of the herb mix to 1 cup water, then simmer at a low boil for 10 minutes. Strain. Add honey and rice or soy milk to each cup and garnish with a sprinkle of nutmeg.

Longevity Chai

Chai tea originates from India, Nepal, and Tibet and comes in many varieties. The following blend is formulated for longevity. It can be served hot or chilled with frothy steamed milk.

5 tablespoons black tea leaves
6 slices fresh ginger root, grated
3 tablespoons cinnamon chips (or 1 stick broken into small pieces)
1 tablespoon sliced fo–ti
1 tablespoon sliced ginseng root
1 tablespoon sliced licorice root
2 teaspoons cardamom, crushed
6 black peppercorns
4 whole cloves
6 cups water
Honey
Frothy Milk (Soy or rice milk is recommended)
Nutmeg or Cinnamon

Gently warm the herbs and water in a covered sauce pan for 10–15 minutes. Do not boil. Strain the mixture into a warmed teapot and add honey to taste. Pour the chai into a large cup, add a generous heap of frothy milk, and sprinkle with nutmeg or cinnamon.

Makes 2 servings.

Bay Leaf–and Cinnamon–Infused Assam Tea

2 cups apple juice
2 cups water
1/4 cup Assam tea leaves
2 fresh bay leaves
4 cinnamon sticks
Sugar to taste (Optional)

In heavy medium saucepan over medium heat, heat apple juice and water until simmering. Remove from heat and add tea leaves, bay leaves, and cinnamon sticks. Steep 4 minutes, strain into mugs, and add sugar to taste. Serve immediately.
