Elizabeth Mulvihill, candidate for Master of Science in Holistic Nutrition

Perhaps you’ve wondered… Just how does a new student begin his or her Clayton College admissions process? Here are excerpts from the enrollment essay submitted by Elizabeth Mulvihill, an organic farmer in Minnesota.

CCNH congratulates Ms. Mulvihill for receiving one of the school’s Peg Clayton Memorial Scholarships for 2008.

“I Decided to Follow My Passion”

In 2004, after a serious illness, recovery, having a daughter, and healing, I decided to resign from teaching and follow my passion for nutrition and wellness. This passion includes achieving a formal education in holistic nutrition, with a desire for an educational experience that honors and respects a multi-perspective of natural health.

My vision for becoming a holistic nutrition specialist is to start a consulting business and to teach people the importance of their food choices — and how those choices affect their own wellbeing as well as that of our environment. I also want to teach the interconnectedness of exercise, stress reduction, and food choices for optimal health. I feel confident that my experience in teaching fitness programs, cooking classes, physiology, physical education, health education classes, and coaching athletes will complement my education in holistic nutrition and ultimately, my consulting business.
